Ingredients:
Cookie Crust:
• 1 ⅔ cups all-purpose flour
• ½ teaspoon baking powder
• ¼ teaspoon salt
• ¾ cup granulated sugar
• 10 tablespoons butter, room temperature
• 1 large egg, room temperature
• 1 teaspoon vanilla extract
• 1 teaspoon almond extract
Cream Cheese Frosting:
• 8 oz cream cheese, room temperature
• ⅓ cup granulated sugar
• ½ teaspoon vanilla extract
Fruit Topping:
• 2 cups strawberries, sliced
• 2 kiwis, peeled and sliced
• ⅓ cup blueberries
• ¼ cup mandarin oranges, drained
Directions:
1. Preheat oven to 350°F. Lightly spray a 12″ pizza pan.
2. Whisk together flour, baking powder, and salt in a bowl. In another bowl, beat sugar and butter until light and fluffy, then mix in egg, vanilla, and almond extract.
3. Add the dry ingredients to the wet and mix until a soft dough forms. Press it evenly into the pizza pan and bake for 11–13 minutes, until the center is set. Cool completely.
4. Beat together cream cheese, sugar, and vanilla until smooth and creamy. Spread evenly over the cooled cookie crust.
5. Arrange the sliced strawberries, kiwis, blueberries, and mandarin oranges on top however you like.
6. Chill in the fridge until you're ready to serve.
