Mini Pumpkin-Spice Donuts with Brown Butter Vanilla Glaze

Ingredients:


 Baking spray

 2 cups all-purpose flour

 1 tablespoon baking powder

 1 teaspoon salt

 1 teaspoon pumpkin-pie spice

 3 tablespoons cold unsalted butter, cubed

 ¼ cup granulated sugar

 ⅔ cup buttermilk

 1 large egg, lightly beaten

 1 tablespoon vanilla extract


Brown Butter Vanilla Glaze:


 2 tablespoons unsalted butter, browned

 1½ teaspoons vanilla extract

 3 cups powdered sugar

 1 cup milk


Directions:


1. Preheat oven to 325°F and spray a mini donut pan with baking spray.

2. In a bowl, whisk together flour, baking powder, salt, and pumpkin-pie spice.

3. Cut in the cold butter until the mixture resembles coarse crumbs.

4. Stir in sugar, then add buttermilk, egg, and vanilla. Mix gently—lumps are okay.

5. Spoon about 1 tablespoon of batter into each donut cavity; spread gently.

6. Bake for 10–12 minutes, then turn the pan over onto a rack lined with parchment to release donuts.

7. While donuts bake, whisk together browned butter, vanilla, powdered sugar, and milk until smooth to make the glaze.

8. Dip warm donuts into the glaze, then enjoy right away.
